Villa Restaurant General Manager

We are seeking an exceptional Restaurant General Manager to lead the newly refurbished Villa Corinthia, an exclusive dining destination by acclaimed Italian Chef Francesco Mazzei. Bringing his culinary expertise to Malta, Chef Mazzei redefines Italian cuisine using the finest locally sourced Maltese ingredients.
This one-of-a-kind concept demands a passionate and experienced leader to establish Villa Corinthia as the island’s premier fine dining destination. The Restaurant General Manager will deliver outstanding guest experiences, lead and develop a high-performing team and manage all aspects of the restaurant’s operation in line with budgetary and quality standards.
As the face of Chef Francesco Mazzei and Villa Corinthia, the Restaurant General Manager will uphold and build upon two prestigious reputations, shaping the F&B vision and ensuring the restaurant remains at the forefront of the local and international culinary scene.
Key responsibilities
Team leadership & development

Lead the recruitment, onboarding and development of the restaurant team

Conduct regular training sessions and annual appraisals to maintain exceptional service levels

Foster a culture of accountability, growth, and excellence
Operational oversight

Oversee daily operations to ensure a seamless, high-standard dining experience

Guarantee compliance with health, hygiene, and safety protocols (e.g., HACCP, Health & Safety audits)
-
Ensure brand standards are consistently reflected in the restaurant’s setup and service
Sales & profitability
-
Drive revenue through strategic upselling, innovative promotions and menu development
-
Manage inventory and control systems; oversee performance via platforms such as Symphony
-
Monitor P&L performance and implement initiatives to enhance profitability
Guest experience

Represent both Villa Corinthia and Chef Mazzei, acting as the primary guest liaison

Ensure a luxury guest experience, proactively resolve complaints and build strong guest relationships

Continuously monitor and enhance the overall service delivery
Strategic planning

Contribute to the development of business strategies, budgets and operational goals

Align operational plans with the F&B department's strategic vision and sales objectives
Collaboration & communication

Coordinate effectively with departments including F&B, Sales & Marketing, Kitchen and Events

Ensure excellent internal communication and alignment across all hotel outlets
Standards & quality assurance

Monitor guest feedback and third-party quality benchmarks (e.g., LQA)

Implement action plans to address service gaps and maintain high standards
Administration & reporting

Prepare and submit daily performance and revenue reports

Manage staff scheduling, payroll input, and maintain internal audit compliance
Innovation

Collaborate with Chef Mazzei and the culinary team to develop and refresh food, drink, and wine menus

Stay abreast of industry trends to maintain the restaurant’s competitive edge
Experience & qualifications

Proven experience as a Restaurant General Manager or Assistant GM in a luxury or high-volume environment

Experience within a standalone, world-class restaurant is highly desirable

Degree or equivalent qualification in Operational or Hospitality Management
Skills & attributes

Strong leadership and team development capabilities

Excellent Food & Beverage knowledge, including wine expertise

Skilled in guest resolution and customer relations

Competent in upselling and revenue-driving techniques

Familiar with staff appraisals and performance management systems

Willingness to work flexible hours, including evenings, weekends and public holidays
